What is Adobo?

Filipino Adobo is the country’s national dish, commonly made with chicken or pork and marinated in vinegar, soy sauce, garlic, bay leaves and black peppercorns, then simmered in its own marinade. 

Each region in the Philippines has their own version of this dish. Its name may be Spanish (Mexican or Cuban adobo) but its origins came way before the Spanish colonized the tropical islands.
