Flavor Notes: Dark velvety chocolate with floral notes of the mildly sour Philippine mango lifted very nicely by sea salt. The finish comes with a surprising chew of real mango fruit bits.
What is the Philippine carabao mango?
The Carabao mango, also known as the Philippine mango, is a particularly important cultivar of sweet mango from the Philippines. It is reputed worldwide due to its sweetness and exotic taste with flesh containing very little fiber and is very tender and juicy. It is named after the carabao, a native Filipino breed of domesticated water buffalo.
When young, its color is green with a very floral sour taste. Young green mango is eaten with salt or with a special shrimp paste mix called locally as bagoong.
